My mama always had a chicken casserole in the freezer just for unexpected company. And we always had company!
This casserole is super easy, super fast and super good. Make several and stick them in the freezer so you’ll be ready.
Southern Chicken Casserole
1 cup ceam of chicken soup 1 cup diced celery 3/4 cup mayonnaise 3/4 cup chopped pecans 2 cups diced chicken 1 cup cooked rice 2 tsp. chopped onion 1 cup waterchestnuts, sliced thick
Mix all ingredients together and put in a casserole dish. Top with crushed crackers or crushed corn flakes. (At this poinnt you can stick the casserole in the freezer.)
To bake, preheat oven to 350 degrees. Bake casserole for 45 minutes until hot and bubbly.
