This is one of my favorite casseroles. The asparagus flavor is not overpowering. It’s the perfect side dish with grilled pork. It’s good as a take-along, too, if you’re going to a social event.
Asparagus Casserole
1 can asparagus or equivalent cooked asparagus
3/4 stack Saltine crackers
2 Tbsp. butter
1 cup milk
1 cup cheddar cheese, shredded
1 egg
2 Tbsp. all-purpose flour
Put butter in saucepan and heat. When melted, add flour and slowly pour in milk, stirring until you have a nice white sauce. Add extra milk if it becomes too thick. Let cool for a few minutes. Add slightly beaten egg, cheese and crumbled Saltines. Fold in asparagus. Bake at 400° for 35 minutes.
