Iwas so excited to find this old recipe. This one of my favorite cookies of all time. You can take them to any party and they disappear immediately. Make a double batch and take some to someone who is sick. They’ll feel better immediately.
Potato Chip Cookies
1 lb. butter 1 cup sugar 1 tsp. vanilla 3½ cups flour 1 cup crushed potato chips
powdered sugar
Cream butter and sugar. Add vanilla and mix well. Add flour and crushed potato chips. Make a thick dough. Pinch off dough and roll into ball the size of marbles. Place on ungreased cookie sheet and mash balls flat with fork. Bake at 375º for 15 to 18 minutes or until slightly brown and firm. Do not over bake. Dip in powdered sugar when cool. Makes about 120 cookies.
