LEMON SQUARES

For the Crust: Sift 2 cups flour with 1/2 cup confectioners sugar. Mix with 1/2 lb. softened butter (2 sticks). Press into a 9-inch by 13-inch greased pan and bake at 350º for 25 minutes. For the Filling: 1/3 cup fresh-squeezed lemo juice plus

zest from the lemon 2 cups sugar 4 eggs 1/4 cup flour 1 tsp. baking powder

Beat together lemon juice, sugar and eggs. Add flour and baking powder. Pour over crust. Bake at 350º for 25 minutes. Cool (freeze if desired). Sprinkle with confectioners sugar before serving.
