This traditional Tuscan dish calls for fried chicken. But if you’re like me, and don’t want your kitchen smelling like fried food, one alternative is to purchase the fried chicken at any grocery store and then follow the recipe! Voila! That’s easy and good!

Chicken Cacciatore

12 pieces white meat chicken (or white

mixed with dark) 2 onions, chopped ½ green pepper, chopped ½ tsp. Garlic powder 1 large can tomato sauce 2 bay leaves ½ tsp. Celery seed 1 can mushroom pieces 1 cup shredded cheese

Dip chicken in flour. Brown in fat. Remove from bone. Or begin here if using purchased fried chicken. Sauté onions and peppers in fat. Place chicken, peppers and onions in casserole. Mix seasonings and tomato sauce and pour over chicken. Top with mushrooms. Bake at 350º for 1 hour. Remove from oven and sprinkle with cheese about 15 minutes before serving.
